If you've never tried Bajio Mexican Grill then you are really missing out!! Bajio's has several locations in Utah. I eat at Bajio's at least once a month. If I don't then I have severe withdrawals. Their food is always fresh and full of flavor.
I especially like Bajio's Chicken Geen Chili Stuffed Quesadilla. It is awesome! If you haven't tried it then stop whatever you are doing and head to the nearest Bajio Mexican Grill.

Anyway I just wanted to do a quick post about Bajio Mexican Grill. I just wish that I had their recipe to be able to make their Chicken Green Chili Stuffed Quesadilla!! Try it and you'll know what I'm talking about.
Other items that are good are their shrimp tacos and their salads. I saw Bajio's Chimichanga for the first time the other day and it looked tasty!!

We LOVE BAjio's! You know you go there way too much when Colton says- Mom, I have an idea! We should go to Bajio's everyday and see if we get sick of it! We had to let go of the idea, b/c there was know way we would get sick of it! I personally could eat the Chicken Green Chili SALAD every day- and I have to say, their tortillas are definately better than Cafe Rio's!!! I will say, we now only eat their once a month, and I can say, I feel a craving coming on!

This is the only thing i EVER get from bajo's! Its hands down the best. But you have to get there nummy sour cream on top and some mango salsa to make it complete! love it Jay!
I love this quesadilla. I always get a scoop of sour cream, which by the way, is SO GOOD...and a lime. The chutney makes this dish! Summer, thanks for the link I'm going to have to make that soon.

Yeah, I had a few bad experiences at Bajio: I ate there a few times, and each time the food tasted like dog vomit.

As a witness to you eating numerous bajio meals...you have liked them. They are not your favorite but you do eat there.
Many of you know I don't like meat. I think it tastes gross. I used to be okay with chicken but my taste for chicken has totally gone away. I was reading Jay's blog about Bajios and totally started craving this chicken so we went there that night and I loved it. It was awesome. It must be pretty good coming from a meat hater. I don't think I will venture outside of this dish. And it is probably just the pregnancy that made me want it but I would recommend it!!
